This is one of those recipes I wish I knew years ago. It doesn’t even need a shaved ice machine. Many thanks to Kind of Cooking for the incredible hack.

My favorite variation is matcha shaved ice with mochi and red bean. I make my own mochi (another easy at-home dessert) so that it’s fresh. My go-to mochi recipe is from Just One Cookbook.

Shaved Ice Ingredients:

  • 1/2 L whole milk
  • 50ml corn syrup or glucose syrup
  • sweetened red bean (available canned), optional

Mochi Ingredients:

  • 50g Shiratamako or Mochiko
  • 25g sugar
  • 90g water
  • corn starch or potato starch for dusting

For shaved ice: Combine cold milk and syrup. (Any amount at 10:1 ratio will work.) Freeze in a covered/plastic wrapped glass container overnight. Next day, remove the frozen milk block and place in a plastic sandwich bag. Use a grater to “shave” the milk block into a bowl*. Top with red bean, mochi, & matcha powder, as desired. *I recommend using an oven mitt to protect your hand from the cold.

For mochi: Mix shiratamako* with sugar in a bowl. Pour water in intervals and whisk well until even with no lumps. Cover with plastic wrap and microwave for 1 minute (at about 1000W or on high). Wet a silicone spatula with water and mix the mochi dough. Cover with plastic wrap and microwave again for 30 seconds until opaque. Mix again. Spread and cover a surface like a cutting board with corn starch/potato starch. Move the dough onto the covered surface. Also coat your hands and the top of the mochi dough with starch to prevent sticking. Let the mochi dough cool, then cut with a sharp wet knife into desired size for shaved ice. *I highly recommend Shiratamako but Mochiko works as well.

Shaved ice is a versatile crowd favorite. I’ve also topped with golden kiwi, strawberries, blueberries, the list goes on. I’m thinking of adding homemade brown sugar boba next time because I’ve given up waiting for the MeetFresh location in Boston at this point. Someone wake me up when they are open.
